I know it sounds cliché to say that I've been cooking most of my life, but it's true...well partially true. My mom would tell me to watch and observe for years before I ever advanced helping with anything other than licking the bowl when she made desserts (god did I hate how thorough she was with barely leaving anything left to devour). I spent a lot of time observing more than anything and still do as it's just as important with cooking than just doing.

My mom and my grandpa were the main ones who cooked in the family. And being a family from New Orleans, there was a lot of cooking and a lot of gatherings to learn from; it would be the core of my career trying to emulate that feeling: the quintessential southern host who always makes sure you leave with a full belly, your ears talked off, and a feeling of home. ​

I'd always dreamt of traveling as a way to learn about all (and I do mean all) the different cultures and what food it entailed from around the world. I envied not having any familial roots to places like Italy or somewhere in SE Asia or even Mexico (the closest country to me), where people always wanted to know the rich histories and how-tos on dishes in these places. It would take my internship in Rome to realize that my Creole/Cajun culture was just as important as any of these places and no matter where in the world, we were more similar than I thought.

I could go on and on about my experience, but that would require pages. Dishes are derived from stories and journeys and that's what I try to evoke out of all my cooking. Every element and ingredient has a purpose which adds to the story. When you work with me, my goal is to create an adventure that not only gives you tasty food (and it's the tastiest) but also leaves you with: a history lesson, fun facts/new knowledge, a memorable story to share with others, or even some inspiration for your next meal you prepare at home.
